Turkey Tettrazini


This old italian recipe is my classic post-holiday dish : creamy pasta with mushooms is the tastiest way I found to serve leftover Christmas turkey. This recipe serves 2-3 people, but you can easily double it up for unexpected guests!

Preheat the ovet at 400 degrees. Cook the spaghetti in boiling salted water for about 7 minutes. In an oven-proof skillet, heat the olive oil on high heat, then fry the mushrooms and the garlic in it for 2 minutes. Add the cooked turkey and the white wine, then lower the heat and leave it to simmer for about 5 minutes. Once the wine has evapoated by about half, add the cream, half of the parmesan and season with a little salt (the parmesan is salty already) and lots of pepper. Add the drained spaghetti to the creamy sauce and mix well. Top the pasta with the rest of the parmesan, and put the whole dish oin the oven for about 15 minutes, or until the top looks nicely golden and crispy.
